Rhubarb Muffins

Ingredients
- Servings: 12
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 2 eggs, beaten
- 1 cup milk
- 1/4 cup butter, melted
- 1 teaspoon lemon juice
- 1 1/2 cups fresh rhubarb, finely chopped
Recipe
- 1 in a large bowl combine dry ingredients.
- 2 in a separate bowl combine remaining ingredients and pour over dry mixture.
- 3 stir till batter is just moist and lumpy.
- 4 spoon into greased muffin cups.
- 5 bake at 375 for 20 - 25 minutes.
