Rhubarb Muffins

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon lemon juice
  • 1 1/2 cups fresh rhubarb, finely chopped

Recipe

  • 1 in a large bowl combine dry ingredients.
  • 2 in a separate bowl combine remaining ingredients and pour over dry mixture.
  • 3 stir till batter is just moist and lumpy.
  • 4 spoon into greased muffin cups.
  • 5 bake at 375 for 20 - 25 minutes.
