Pumpkin Loaf

Ingredients
- 4 eggs
- 2 cups sugar
- 1 1/2 cups oil
- 2 cups canned pumpkin (reserve 3 tbsp for glaze)
- 3 cups flour
- 1 1/2 tablespoons cinnamon
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground nutmeg
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- glaze
- 6 tablespoons butter (softend)
- 3 tablespoons pumpkin
- 2 1/2 tablespoons icing sugar
- 1 pinch salt
- 3/4 teaspoon cinnamon
- 3 tablespoons milk
- 1 1/2 teaspoons vanilla
Recipe
- 1 mix dry ingredients together and in separate bowl mix wet ingredients together and pour wet into dry, do not over mix or loaves will be heavy, ( batter will be thick).
- 2 spray pans with cooking spray.
- 3 divid batter into two pans
- 4 bake at 350 degrees for 50-60 minute.
- 5 remove from pans and while still warm but not hot spread glaze over top.
- 6 slice and enjoy.
