Quinoa Veggie Burgers

Ingredients

- 1/2 cup quinoa, uncooked
- 1 carrot, diced
- 4 scallions, sliced
- 2 garlic cloves
- 15 ounces black beans, drained and rinsed
- 1/4 cup dried breadcrumbs, italian seasoned
- 1 large egg, lightly beaten
- 1 tablespoon ground cumin
Recipe
- 1 in a small pot, bring 3/4 cup water to a boil.
- 2 add quinoa, cover, and reduce heat to low.
- 3 cook until liquid is absorbed, 12 to 14 minutes; set aside.
- 4 in a food processor, pulse carrot until finely chopped.
- 5 add cooked quinoa, scallions, garlic, black beans, breadcrumbs, egg, cumin, salt; pulse until combined but still slightly chunky.
- 6 form mixture into four patties.
- 7 in a large nonstick skillet, heat oil over medium; cook burgers about 8 minutes per side.
