Gingerbread

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 1 3/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons ginger
  • 1/4 teaspoon clove
  • 1/2 cup shortening
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 3/4 cup molasses
  • 3/4 cup boiling water

Recipe

  • 1 combine flour, baking powder, soda, salt and spices in a bowl mixing well to blend.
  • 2 cream shortening, sugar and eggs thoroughly.
  • 3 add molasses and mix well.
  • 4 add dry ingredients to molasses mixture.
  • 5 stir in boiling water; mix well.
  • 6 pour batter into greased and floured 9-inch square pan.
  • 7 bake at 350°f for 40-45 minutes or until toothpick inserted in centre comes out clean.
