Rhubarb Muffins

Ingredients

  • 1 1/4 cups brown sugar
  • 1/2 cup salad oil
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup buttermilk
  • 1 1/2 cups chopped rhubarb
  • 1/2 cup chopped nuts
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon melted butter

Recipe

  • 1 in large bowl mix brown sugar, oil, egg, and vanilla.
