Pumpkin Ginger Cranberry Muffins

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup wheat bran
  • 1/2 cup soy protein
  • 1/4 cup applesauce
  • 3 tablespoons oil
  • 1 tablespoon ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 14 ounces pumpkin
  • 1/3 cup water
  • 1 tablespoon baking powder
  • 1/2 tablespoon cornstarch
  • 1 1/2 cups cranberries

Recipe

  • 1 mix dry ingredients.
  • 2 mix in wet ingredients.
  • 3 bake at 400 degrees for 30 minutes.
