Pumpkin Cornbread

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 1 1/4 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon coriander
  • 3/4 cup yellow cornmeal
  • 2/3 cup brown sugar
  • 2 tablespoons honey
  • 1/4 cup butter, melted
  • 2 eggs, beaten
  • 3/4 cup canned pumpkin
  • 2/3 cup buttermilk

Recipe

  • 1 sift together flour, baking powder, salt and coriander in a large mixing bowl; stir in cornmeal.
  • 2 in a separate bowl, combine brown sugar, honey, melted butter, eggs, pumpkin and buttermilk.
  • 3 gradually stir into the dry mixture until all ingredients are blended; do not overmix.
  • 4 pour batter into a square 8-inch baking pan and bake in 350 degree oven 40-45 minutes.
