Maple Breakfast Bake

Ingredients

- 1 loaf egg challah (or other firm bread)
- 1 (250 g) package cream cheese, light
- 2 cups blueberries (fresh or frozen)
- 8 eggs, beaten
- 1 1/2 cups milk
- 1/4 cup maple syrup
- 1/4 cup butter, melted
Recipe
- 1 preheat oven to 350°f.
- 2 remove crust from bread; cut in 1-inch cubes (makes about 10 cups).
- 3 cut cream cheese into cubes (makes about 1 cup).
- 4 grease a 9-inch square baking dish. place half the bread cubes in the dish.
- 5 scatter cream cheese cubes and about half the blueberries over the bread.
- 6 top with remaining bread cubes and blueberries.
- 7 in a bowl, combine eggs, milk, maple syrup and butter. carefully pour over bread mixture.
- 8 bake until a knife inserted in the center comes out clean, about 1 hour, covering with aluminum foil if edges brown too much. to serve, cut in squares.
- 9 serve with additional maple syrup if desired.
