Maple Breakfast Bake

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 9
  • 1 loaf egg challah (or other firm bread)
  • 1 (250 g) package cream cheese, light
  • 2 cups blueberries (fresh or frozen)
  • 8 eggs, beaten
  • 1 1/2 cups milk
  • 1/4 cup maple syrup
  • 1/4 cup butter, melted

Recipe

  • 1 preheat oven to 350°f.
  • 2 remove crust from bread; cut in 1-inch cubes (makes about 10 cups).
  • 3 cut cream cheese into cubes (makes about 1 cup).
  • 4 grease a 9-inch square baking dish. place half the bread cubes in the dish.
  • 5 scatter cream cheese cubes and about half the blueberries over the bread.
  • 6 top with remaining bread cubes and blueberries.
  • 7 in a bowl, combine eggs, milk, maple syrup and butter. carefully pour over bread mixture.
  • 8 bake until a knife inserted in the center comes out clean, about 1 hour, covering with aluminum foil if edges brown too much. to serve, cut in squares.
  • 9 serve with additional maple syrup if desired.
