Potato Olive Bread

Ingredients
- 3/4 cup whole wheat flour
- 3/4 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup freshly grated parmesan cheese
- 1/4 cup chopped kalamata olives or 1/4 cup green olives
- 1 large garlic clove, minced
- 1 cup mashed potatoes (1 large potato)
- 1 large egg, beaten
- 1/4 cup beer or 1/4 cup ale or 1/4 cup water
Recipe
- 1 preheat oven to 375 degrees.
- 2 combine flours, baking powder, and salt, mixing well.
- 3 stir in cheese, olives, and garlic.
- 4 combine potatoes and egg, then stir into the flour mixture.
- 5 add the beer or ale or water all at once and stir well for 30 seconds.
- 6 turn the dough out onto a floured surface and knead gently for 30 seconds.
- 7 form into a 5-inch round loaf and slash an 'x' across the top, dividing the loaf into four equal sections.
- 8 transfer the loaf to a baking sheet and bake 45 minutes or until golden brown.
- 9 cool on a wire rack.
