Banana Bread - Low Fat, High Fiber

Ingredients
- 3/4 cup flour
- 3/4 cup whole wheat flour
- 3/4 cup ground flax seeds (sometimes called 'flax seed meal')
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/3 cup plain nonfat yogurt
- 2 -3 mashed bananas
Recipe
- 1 preheat oven to 350 degrees.
- 2 grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
- 3 mix together dry ingredients (flour through salt) in a bowl.
- 4 in a separate bowl, beat together eggs and yogurt.
- 5 add dry ingredients and mashed bananas alternately to wet ingredients, stirring until dry ingredients are completely incorporated and moist.
- 6 pour into prepared pan.
- 7 bake 55-60 minutes, or until golden and tester inserted in center comes out clean.
- 8 cool for 15 minutes in pan; remove from pan and cool completely.
