Potato Casserole

Total Time: 1 hr 15 mins Preparation Time: 20 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs potatoes, peeled & diced (4 to 5 medium)
  • 1/2 teaspoon salt
  • 3 tablespoons butter or 3 tablespoons margarine
  • 2 tablespoons flour
  • salt and pepper
  • 2 cups milk
  • 2 hard-boiled eggs, peeled & sliced
  • 2 tablespoons chopped onions
  • 3 tablespoons dried breadcrumbs

Recipe

  • 1 place potatoes in large saucepan.
  • 2 cover with cold water.
  • 3 add 1/2-teaspoon salt and bring to a boil.
  • 4 reduce heat to low and cook 20 to 25 minutes or until potatoes are tender.
  • 5 drain; reserve.
  • 6 melt 2 tablespoons butter in medium saucepan.
  • 7 add flour, salt, and pepper; cook until bubbly.
  • 8 add milk; stir well.
  • 9 cook, stirring constantly, until thickened.
  • 10 combine potatoes, hard-boiled eggs, onion, salt, and pepper in lightly greased 1 1/2 quart casserole.
  • 11 add sauce; blend lightly with spatula.
  • 12 melt remaining 1 tablespoon butter.
  • 13 add breadcrumbs; mix well.
  • 14 sprinkle buttered crumbs over casserole.
  • 15 bake at 350 degrees for 30 minutes.
  • 16 serve hot.
