Gahboo's Bread And Butter Pickles

Total Time: 1 hr 30 mins Preparation Time: 1 hr Cook Time: 30 mins

Ingredients

  • 4 quarts cucumbers, sliced
  • 6 cups onions, sliced
  • 1 green bell pepper, sliced
  • 1 red sweet bell pepper, sliced
  • 3 garlic cloves, whole
  • 1/3 cup pickling salt
  • 5 cups sugar
  • 3 cups cider vinegar
  • 1 tablespoon yellow mustard seeds
  • 1 tablespoon brown mustard seeds
  • 1 1/2 teaspoons celery seeds
  • 1 1/2 teaspoons ground turmeric

Recipe

  • 1 combine cucumbers, onion, green pepper, red pepper, and garlic.
  • 2 layer mixture, salt and cracked ice in a large bowl.
  • 3 let stand covered 3 hours, then drain in collander, but do not rinse.
  • 4 remove garlic cloves, and combine all remaining ingredients in large stock pot.
  • 5 bring to boiling, then remove from heat.
  • 6 fill hot pint jars leaving 1/2" headspace, remove bubbles.
  • 7 adjust lids and process in boiling water bath for 5 minutes (begin timing after boil returns).
  • 8 remove and cool.
