Gahboo's Bread And Butter Pickles

Ingredients
- 4 quarts cucumbers, sliced
- 6 cups onions, sliced
- 1 green bell pepper, sliced
- 1 red sweet bell pepper, sliced
- 3 garlic cloves, whole
- 1/3 cup pickling salt
- 5 cups sugar
- 3 cups cider vinegar
- 1 tablespoon yellow mustard seeds
- 1 tablespoon brown mustard seeds
- 1 1/2 teaspoons celery seeds
- 1 1/2 teaspoons ground turmeric
Recipe
- 1 combine cucumbers, onion, green pepper, red pepper, and garlic.
- 2 layer mixture, salt and cracked ice in a large bowl.
- 3 let stand covered 3 hours, then drain in collander, but do not rinse.
- 4 remove garlic cloves, and combine all remaining ingredients in large stock pot.
- 5 bring to boiling, then remove from heat.
- 6 fill hot pint jars leaving 1/2" headspace, remove bubbles.
- 7 adjust lids and process in boiling water bath for 5 minutes (begin timing after boil returns).
- 8 remove and cool.
