Greek Chickpea & Tuna Pitas

Ingredients

  • Servings: 4
  • 1/3 cup olive oil
  • 3 tablespoons lemon juice
  • 1 small garlic clove, minced
  • 1 teaspoon oregano
  • 1 teaspoon marjoram
  • 1/2-1 teaspoon salt
  • 1/2-1 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 0.5 (15 ounce) can chickpeas, drained & rinsed
  • 1 (5 ounce) can tuna, drained
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon celery, diced
  • 3 -4 large scallions, diced
  • 4 pita bread

Recipe

  • 1 mix the ingredients together for the dressing, set aside.
  • 2 stir the chickpeas, tuna, parsley, celery, & scallions together in a bowl. pour over the dressing, mix well.
  • 3 stuff each pita with equal amounts of the tuna mixture.
