Ricotta Swiss Wedges (crazy Meatloaf!)

Ingredients
- Servings: 8
- 2 large eggs
- 4 slices crisp cooked bacon, crumbled
- 3/4 cup fine dry breadcrumb
- 1/2 cup tomato sauce
- hot salsa
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 lbs lean ground beef
- 2 cups light ricotta cheese
- 1 cup grated swiss cheese
- 5 tablespoons chopped fresh parsley
Recipe
- 1 combine first 10 ingredients in large bowl.
- 2 add ground beef. mix well. press into greased 9 inch springform pan. set pan on baking sheet with sides. bake, uncovered, in 350f oven for about 30 minutes until firm.
- 3 combine remaining 3 ingredients in small bowl. spread on top of meatloaf. bake for another 45 to 50 minutes until fully cooked, and internal temperature of meat reaches 160°f let stand for 10 minutes.
- 4 cuts into 8 wedges.
