Ricotta Swiss Wedges (crazy Meatloaf!)

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 8
  • 2 large eggs
  • 4 slices crisp cooked bacon, crumbled
  • 3/4 cup fine dry breadcrumb
  • 1/2 cup tomato sauce
  • hot salsa
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 lbs lean ground beef
  • 2 cups light ricotta cheese
  • 1 cup grated swiss cheese
  • 5 tablespoons chopped fresh parsley

Recipe

  • 1 combine first 10 ingredients in large bowl.
  • 2 add ground beef. mix well. press into greased 9 inch springform pan. set pan on baking sheet with sides. bake, uncovered, in 350f oven for about 30 minutes until firm.
  • 3 combine remaining 3 ingredients in small bowl. spread on top of meatloaf. bake for another 45 to 50 minutes until fully cooked, and internal temperature of meat reaches 160°f let stand for 10 minutes.
  • 4 cuts into 8 wedges.
