Potato Farl

Total Time: 26 mins Preparation Time: 20 mins Cook Time: 6 mins

Ingredients

  • 2 cups mashed potatoes (2 lb or 1 kg)
  • 1 cup plain flour (4 oz or 125 g)
  • 2 tablespoons butter
  • 1 dash salt

Recipe

  • 1 melt the butter and mix into the potatoes with the salt.
  • 2 work in the flour quickly but thoroughly and knead lightly.
  • 3 divide in two and roll out each half on a floured board to form a circle about the size of a large dinner plate.
  • 4 cut in quarters (farls) and cook for about 3 minutes on each side in a heavy frying pan in a little bacon fat.
