Potato Dumplings

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 6 medium potatoes, pared
  • 2 eggs, beaten
  • 3/4 cup flour
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons onions, minced
  • 1 cup fine breadcrumbs
  • 1/4 cup butter

Recipe

  • 1 boil potatoes and put through ricer.
  • 2 let cool.
  • 3 add eggs, spices and salt, beat well.
  • 4 roll into balls the size of golf balls.
  • 5 drop in boiling salted water to cover.
  • 6 simmer 20 minutes.
  • 7 lift out.
  • 8 brown onion and bread crumbs in butter.
  • 9 sprinkle crumb mixture over dumplings.
