Potato Cups Ala Turkey Meatballs

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 cups mashed potatoes
  • 1 egg
  • 3 green onions, finely chopped
  • 1/3 cup breadcrumbs
  • 1/4 teaspoon cumin, ground
  • 1/2 teaspoon salt
  • 1 garlic clove, minced
  • 1/8 teaspoon black pepper
  • 1/2 cup cilantro, finely chopped
  • 1 1/4 lbs ground turkey
  • 2 cups turkey gravy

Recipe

  • 1 preheat oven to 400 degrees fahrenheit.
  • 2 spray jelly roll pan (with sides) with cooking spray.
  • 3 place eight mounds of potato onto pan.
  • 4 combine egg, onion, bread crumbs, cumin, salt, garlic, pepper, and cilantro; mix in ground turkey, shape into eight meatballs-a bit more than 1/3 cup of meat for each.
  • 5 press one meatball halfway into each potato "cup".
  • 6 bake for 40 minutes, or until meatballs reach 165 f degrees.
  • 7 warm gravy and spoon over meatballs.
