Potato Cups Ala Turkey Meatballs

Ingredients

- 3 cups mashed potatoes
- 1 egg
- 3 green onions, finely chopped
- 1/3 cup breadcrumbs
- 1/4 teaspoon cumin, ground
- 1/2 teaspoon salt
- 1 garlic clove, minced
- 1/8 teaspoon black pepper
- 1/2 cup cilantro, finely chopped
- 1 1/4 lbs ground turkey
- 2 cups turkey gravy
Recipe
- 1 preheat oven to 400 degrees fahrenheit.
- 2 spray jelly roll pan (with sides) with cooking spray.
- 3 place eight mounds of potato onto pan.
- 4 combine egg, onion, bread crumbs, cumin, salt, garlic, pepper, and cilantro; mix in ground turkey, shape into eight meatballs-a bit more than 1/3 cup of meat for each.
- 5 press one meatball halfway into each potato "cup".
- 6 bake for 40 minutes, or until meatballs reach 165 f degrees.
- 7 warm gravy and spoon over meatballs.
