Oven-fried Eggplant Slices

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs eggplants
  • mayonnaise
  • breadcrumbs, in shallow dish

Recipe

  • 1 preheat oven to 425 degrees and place parchment paper on baking pan.
  • 2 slice eggplant into 1/2 inch thick rounds.
  • 3 spread thin layer of mayonnaise on one side, then press into bread crumbs.
  • 4 repeat for other side of eggplant round and for all other slices.
  • 5 bake 10-12 minutes (or until golden brown) each side.
