Custard Filled Cornbread

Ingredients

- 2 eggs
- 3 tablespoons butter, melted
- 1/3 cup sugar
- 1/2 teaspoon salt
- 2 cups milk
- 1 1/2 tablespoons vinegar
- 1 cup flour
- 3/4 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup heavy cream or 1 cup whipping cream
Recipe
- 1 butter an 8-inch baking dish and place it in the oven.
- 2 preheat oven to 350 degrees f and let the dish get hot while mixing the batter.
- 3 beat the eggs with butter until well blended.
- 4 add sugar, salt, milk, and vinegar, beat well.
- 5 in another bowl, sift together the flour, cornmeal, baking powder, and baking soda.
- 6 add to egg mixture.
- 7 mix just until the batter is smooth.
- 8 pour into heated dish, then pour cream into the center of the batter.
- 9 do not stir.
- 10 place in oven and bake 45-55 minutes, or until lightly browned.
- 11 serve warm.
- 12 makes 9 servings.
