Cranberry-banana Bread

Total Time: 1 hr 25 mins Preparation Time: 20 mins Cook Time: 1 hr 5 mins

Ingredients

  • 2/3 cup shortening
  • 1 1/3 cups sugar
  • 4 eggs
  • 3 1/2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup chopped nuts
  • 2 cups mashed, ripe bananas
  • 1 (16 ounce) can whole berry cranberry sauce

Recipe

  • 1 preheat oven to 350- grease two 9x5 loaf pans.
  • 2 cream shortening with sugar; add eggs one at a time, beating well after each addition.
  • 3 combine dry ingredients& add alternately with bananas to shortening mixture.
  • 4 add nuts, stir well.
  • 5 fold in cranberry sauce.
  • 6 pour batter into prepared pans- bake 60-65 minutes or until done.
  • 7 remove from pans& cool thoroughly on wire rack (allow to cool completely before slicing).
