Opossum

Total Time: 76 hrs Preparation Time: 72 hrs Cook Time: 4 hrs

Ingredients

  • Servings: 5
  • 1 opossum
  • 1/2 cup salt
  • 1 red pepper pod
  • bread dressing (with sage or oysters)
  • 4 sweet potatoes

Recipe

  • 1 the carcass can be trimmed of some of the fat. it is better when aged a few days and soaked in salt water for a day.
  • 2 to cook parbroil in water to which one red pepper pod has been added.
  • 3 par broiling may remove some of the fat.
  • 4 remove the meat from the water.
  • 5 stuff with dressing.
  • 6 bake with sweet potatoes around it.
  • 7 don't ask me how long to cook and i'm not worried about adding it since no one will probably ever be make.
