Oatmeal Banana Bread Pancakes

Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/4 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 2 eggs, beaten
- 2 ripe bananas, mashed (about 3/4 cup)
- 3 tablespoons butter, melted
- 2 teaspoons vanilla
- 1 tablespoon vegetable oil
Recipe
- 1 in a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda and salt.
- 2 in a separate bowl, whisk together the milk, eggs, bananas, butter and vanilla.
- 3 pour over the flour mixture and stir until almost smooth.
- 4 let stand for 10 minutes.
- 5 heat a nonstick skillet or griddle to medium heat.
- 6 brush lightly with some of the oil.
- 7 pour in about 1/3 cup batter for each pancake.
- 8 cook for about 3 minutes or until the underside is golden and bubbles break on top but do not fill inches.
- 9 turn and cook until the underside is golden brown, about 1 minute.
- 10 repeat with remaining batter, brushing skillet with more oil if necessary.
