Pretzels

Total Time: 2 hrs Preparation Time: 1 hr 40 mins Cook Time: 20 mins

Ingredients

  • 30 g yeast
  • 1 1/2 tablespoons brown sugar
  • 1 pinch salt
  • 375 ml warm water
  • 440 g flour (all-purpose)
  • 150 g bread flour (i used italian flour because i didnムt had bread flour)
  • 500 ml warm water
  • 1 1/2 tablespoons baking soda
  • 30 g melted butter
  • 2 tablespoons kosher salt

Recipe

  • 1 in a large bowl dissolve the yeast, brown sugar and salt in the 375 ml warm water.
  • 2 add the flour and knead dough on a floured surface until smooth and elastic (at least 5 min).
  • 3 grease and leave to rise in a bowl, covered for about 1 hour.
  • 4 after the hour passed, mix half a liter of warm water with the baking soda in a pan.
  • 5 cut dough into 12 pieces (or 24 if you want them a smaller size).
  • 6 roll each piece into a 30 cm rope as thin as you prefer them.
