Reuben Meatloaf

Ingredients
- Servings: 6
- 1 1/2 lbs ground beef
- 1 cup rye breadcrumbs
- 1/2 cup russian salad dressing or 1/2 cup thousand island dressing
- 1 egg
- 1/4 teaspoon pepper
- 1 (8 ounce) can sauerkraut, rinsed and drained
- 1/2 cup swiss cheese, shredded
Recipe
- 1 combine ground beef, bread crumbs, dressing, egg and pepper.
- 2 pat into approximately a 10x12 rectangle on a piece of waxed paper.
- 3 top with sauerkraut and swiss cheese, and roll up like a jelly roll.
- 4 seal ends and place seam side down into a meatloaf pan.
- 5 bake at 350 for 45 minutes or until done.
- 6 i usually sprinkle a little more cheese on top and put it back into the oven to melt it.
