Lighter Than Cooking Light Creamy Broccoli Cheese Casserole

Ingredients
- 4 cups broccoli, steamed until almost done
- 1 small onion, cut into chunks
- 2 teaspoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups low-fat milk
- 3 ounces neufchatel cheese
- 1/2 shredded cheddar cheese
- 1/2 cup breadcrumbs, seasoned
Recipe
- 1 pre-heat oven to 375°f.
- 2 steam broccoli until almost done. toss with onion chunks.
- 3 spread veggies into sprayed casserole dish.
- 4 melt butter in saucepan, adding salt and pepper.
- 5 whisk in flour until bubbly, then slowly add the milk whisking constantly.
- 6 heat until thickened, stirring constantly.
- 7 stir in the neufchatel cheese, just until melted.
- 8 stir in grated cheese, remove from heat and continue to stir just until melted.
- 9 pour cheese sauce over veggies.
- 10 sprinkle breadcrumbs over all, spray crumbs with pan spray.
- 11 bake 25-30 minutes until broccoli is done and top is browning.
