Lighter Than Cooking Light Creamy Broccoli Cheese Casserole

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 4 cups broccoli, steamed until almost done
  • 1 small onion, cut into chunks
  • 2 teaspoons butter
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups low-fat milk
  • 3 ounces neufchatel cheese
  • 1/2 shredded cheddar cheese
  • 1/2 cup breadcrumbs, seasoned

Recipe

  • 1 pre-heat oven to 375°f.
  • 2 steam broccoli until almost done. toss with onion chunks.
  • 3 spread veggies into sprayed casserole dish.
  • 4 melt butter in saucepan, adding salt and pepper.
  • 5 whisk in flour until bubbly, then slowly add the milk whisking constantly.
  • 6 heat until thickened, stirring constantly.
  • 7 stir in the neufchatel cheese, just until melted.
  • 8 stir in grated cheese, remove from heat and continue to stir just until melted.
  • 9 pour cheese sauce over veggies.
  • 10 sprinkle breadcrumbs over all, spray crumbs with pan spray.
  • 11 bake 25-30 minutes until broccoli is done and top is browning.
