Pumpkin Cranberry Bread

Ingredients
- 1 3/4 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 cup pumpkin
- 1/2 cup oil
- 2 eggs
- 1 1/2 cups cranberries, coarsely chopped (fresh or frozen)
Recipe
- 1 preheat oven to 350°. grease and flour an 8x4 loaf pan.
- 2 combine dry ingredients in a medium mixing bowl.
- 3 in another bowl, combine remaining ingredients, except cranberries.
- 4 add wet ingredients to dry ingredients, stirring just until dry ingredients are moist.
- 5 stir in cranberries.
- 6 spread evenly in a loaf pan.
- 7 bake 1 1/2 hours or until a toothpick inserted into the center of the bread comes out clean. remove from pan. cool completely on a wire rack.
