Refrigerator Bran Muffins

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 cup granulated sugar
  • 6 eggs
  • 1/3 cup molasses
  • 3 cups milk
  • 5 cups natural bran
  • 3 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup blueberries (or raisins or dates)

Recipe

  • 1 in large bowl, beat together oil, sugar and eggs until well mixed. add remaining ingredients and stir until combined. cover and refrigerate overnight or up to 6 weeks.
  • 2 spoon batter into paper-lined or nonstick muffin tins and bake in 425 f oven for 15 to 20 minutes or until firm to the touch.
  • 3 makes 24 large muffins or 48 medium muffins.
