Pineapple Banana Coconut Bread

Ingredients

- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup mashed banana
- 1 (8 ounce) can crushed pineapple, drained
- 1/2 cup chopped macadamia nuts
- 1/2 cup shredded coconut
Recipe
- 1 cream butter and sugar.
- 2 add eggs, one at a time, beating well after each.
- 3 sift dry ingredients and add to creamed mixture.
- 4 fold in banana, pineapple, coconut and nuts. pour mixture into a greased and floured loaf pan.
- 5 bake at 350 degrees for 50-60 minutes.
- 6 cool in pan 10 minutes, remove to wire rack.
