Rhubarb Nut Bread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 1/2 cups brown sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 2 3/4 cups all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 cups diced fresh rhubarb
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup granulated sugar
  • 1 tablespoon margarine or 1 tablespoon butter
  • ground cinnamon

Recipe

  • 1 for the bread:.
  • 2 mix ingredients in order listed. batter will be very thick. pour into 2 greased loaf pans. sprinkle with topping. bake in a 350-degree oven for 45 minutes.
  • 3 for the topping:.
  • 4 mix sugar, margarine and cinnamon until cruble and sprinkle over tops of loads.
