Rhubarb Nut Bread

Ingredients
- 1 1/2 cups brown sugar
- 2/3 cup vegetable oil
- 1 egg
- 2 3/4 cups all-purpose flour
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 1/2 cups diced fresh rhubarb
- 1/2 cup chopped nuts (optional)
- 1/2 cup granulated sugar
- 1 tablespoon margarine or 1 tablespoon butter
- ground cinnamon
Recipe
- 1 for the bread:.
- 2 mix ingredients in order listed. batter will be very thick. pour into 2 greased loaf pans. sprinkle with topping. bake in a 350-degree oven for 45 minutes.
- 3 for the topping:.
- 4 mix sugar, margarine and cinnamon until cruble and sprinkle over tops of loads.
