Pumpkin Gingerbread Bars (paleo)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup almond butter
  • 1/4 cup honey
  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon clove
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon lemon zest

Recipe

  • 1 preheat oven to 350.
  • 2 mix all ingredients together in a large mixing bowl.
  • 3 put the mixture in an 8x8 baking dish, greased with coconut oil.
  • 4 bake at 350 for 30 mins or until a toothpick stuck in the middle of the dish comes out clean.
