Kiwi Style Eggs Benedict

Total Time: 5 mins Preparation Time: 2 mins Cook Time: 3 mins

Ingredients

  • 2 slices brown bread
  • 4 slices 97% fat-free shaved leg ham
  • 2 eggs (@ room temp)
  • 40 ml tomato sauce
  • 1 teaspoon vinegar

Recipe

  • 1 bring a pot of water to the boil, add the vinegar. swirl the water in a circle motion
  • 2 crack a egg into a small bowl then carefully drop into boiling water.
  • 3 once cooked to your liking remove the egg from the pot and cool in cold water.
  • 4 cook the 2nd egg and place in cold water.
  • 5 toast the bread and top with ham then tomato sauce.
  • 6 remove pot from the heat and place eggs back in water for 1 min.
  • 7 top toast with eggs and serve.
