Kiwi Style Eggs Benedict

Ingredients
- 2 slices brown bread
- 4 slices 97% fat-free shaved leg ham
- 2 eggs (@ room temp)
- 40 ml tomato sauce
- 1 teaspoon vinegar
Recipe
- 1 bring a pot of water to the boil, add the vinegar. swirl the water in a circle motion
- 2 crack a egg into a small bowl then carefully drop into boiling water.
- 3 once cooked to your liking remove the egg from the pot and cool in cold water.
- 4 cook the 2nd egg and place in cold water.
- 5 toast the bread and top with ham then tomato sauce.
- 6 remove pot from the heat and place eggs back in water for 1 min.
- 7 top toast with eggs and serve.
