Pineapple Carrot Bread

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 3 eggs, beaten
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 cup grated carrot
  • 1 (8 ounce) can crushed pineapple, undrained
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans

Recipe

  • 1 combine flour, soda, salt and cinnamon; set aside.
  • 2 combine eggs, sugar and oil in a medium mixing bowl; mix well.
  • 3 stir in carrots, pineapple and vanilla.
  • 4 add dry ingredients, mixing well.
  • 5 stir in pecans.
  • 6 pour batter into 2 greased 9x5x3 inch loafpans.
  • 7 bake at 325 for 1 hour and 10 minutes or until done.
