Greek Scrambled Eggs - Yum!

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 8 eggs
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • salt
  • black pepper
  • 1/4 teaspoon oregano
  • 1/4 cup onion, finely chopped
  • 1/2 cup green bell pepper, chopped
  • 3 medium tomatoes, seeded and chopped
  • 4 slices rustic bread, toasted

Recipe

  • 1 in a large skillet over medium low heat, sauté onion in olive oil until just translucent.
  • 2 add bell pepper, tomatoes, salt, pepper and oregano.
  • 3 whisk together eggs and milk. add to skillet.
  • 4 sprinkle with feta cheese.
  • 5 scramble by folding gently, into large curds.
  • 6 do not over cook. the eggs should still be a bit moist when you serve them.
  • 7 serve with toasted bread.
