Greek Scrambled Eggs - Yum!

Ingredients
- Servings: 4
- 8 eggs
- 1/2 cup feta cheese, crumbled
- 2 tablespoons milk
- 1 tablespoon olive oil
- salt
- black pepper
- 1/4 teaspoon oregano
- 1/4 cup onion, finely chopped
- 1/2 cup green bell pepper, chopped
- 3 medium tomatoes, seeded and chopped
- 4 slices rustic bread, toasted
Recipe
- 1 in a large skillet over medium low heat, sauté onion in olive oil until just translucent.
- 2 add bell pepper, tomatoes, salt, pepper and oregano.
- 3 whisk together eggs and milk. add to skillet.
- 4 sprinkle with feta cheese.
- 5 scramble by folding gently, into large curds.
- 6 do not over cook. the eggs should still be a bit moist when you serve them.
- 7 serve with toasted bread.
