Rhubarb Bread

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup buttermilk
  • 1/2 cup nuts, chopped
  • 1 1/2 cups rhubarb, chopped
  • 1 teaspoon vanilla
  • 1/2 cup brown sugar
  • 1 tablespoon butter, softened

Recipe

  • 1 can use cinnamon and sugar mixture.
  • 2 beat together 1 cup brown sugar, sugar and oil.
  • 3 add egg and beat well.
  • 4 sift flour, salt, baking soda and cinnamon then add to first mixture, alternating with buttermilk.
  • 5 add vanilla and nuts; mix well.
  • 6 stir in rhubarb.
  • 7 put into greased pans.
  • 8 blend topping together and sprinkle on top of batter.
  • 9 bake for 1 hour at 375 degrees or until done.
