Rhubarb Bread

Ingredients
- 2 3/4 cups flour
- 1 1/2 cups brown sugar, packed
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 egg
- 1 cup buttermilk
- 1/2 cup oil
- 1 teaspoon vanilla
- 1 cup finely chopped rhubarb
- 2 tablespoons flour
Recipe
- 1 grease and flour loaf pan.
- 2 in lg. mixing bowl, combine first 4 ing.
- 3 in another bowl, combine next 4 ing.
- 4 mix well.
- 5 stir wet ingredients into dry ingredients.
- 6 toss rhubarb with the 2 tbsp flour; fold into batter.
- 7 bake at 350* for about 50 minutes.
- 8 try the toothpick test and bake longer if necessary.
