Rhubarb Bread

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 3 cups sugar
  • 1 1/3 cups oil
  • 2 eggs
  • 2 cups buttermilk
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 5 cups flour
  • 3 cups rhubarb, diced
  • 1 1/2 cups sugar
  • 3 tablespoons butter or 3 tablespoons margarine, melted
  • 3 teaspoons cinnamon

Recipe

  • 1 beat together the following ingredients - sugar, oil, eggs, buttermilk, salt, baking soda, vanilla, flour. add rhubarb.
  • 2 put 1/2 dough in 3 loaf pans (don't overfill!) and add half of topping.
  • 3 add other half of dough, then the rest of the topping.
  • 4 bake at 350 for 1 1/2 hours.
