Rhubarb Bread

Ingredients
- 3 cups sugar
- 1 1/3 cups oil
- 2 eggs
- 2 cups buttermilk
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 teaspoons vanilla
- 5 cups flour
- 3 cups rhubarb, diced
- 1 1/2 cups sugar
- 3 tablespoons butter or 3 tablespoons margarine, melted
- 3 teaspoons cinnamon
Recipe
- 1 beat together the following ingredients - sugar, oil, eggs, buttermilk, salt, baking soda, vanilla, flour. add rhubarb.
- 2 put 1/2 dough in 3 loaf pans (don't overfill!) and add half of topping.
- 3 add other half of dough, then the rest of the topping.
- 4 bake at 350 for 1 1/2 hours.
