Rhubarb Bread

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 cups brown sugar
  • 2/3 cup oil
  • 1 egg
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1/2 cup nuts, chopped
  • 1 1/2 cups rhubarb, diced
  • 1/2 cup sugar
  • 1 tablespoon butter
  • 1 teaspoon cinnamon

Recipe

  • 1 preheat the oven to 325°f.
  • 2 grease two loaf pans.
  • 3 dice the rhubarb and chop the nuts.
  • 4 mix everything, except the topping ingredients, together in a large bowl.
  • 5 mix well and pour into prepared loaf pans.
  • 6 topping: mix the topping ingredients together and sprinkle over the top of the batter.
  • 7 bake for 60 minutes, taking care not to overbake. this was in big letters so it must be a problem to watch out for lol.
