Rhubarb Bread

Ingredients
- 1 1/2 cups brown sugar
- 2/3 cup oil
- 1 egg
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1/2 cup nuts, chopped
- 1 1/2 cups rhubarb, diced
- 1/2 cup sugar
- 1 tablespoon butter
- 1 teaspoon cinnamon
Recipe
- 1 preheat the oven to 325°f.
- 2 grease two loaf pans.
- 3 dice the rhubarb and chop the nuts.
- 4 mix everything, except the topping ingredients, together in a large bowl.
- 5 mix well and pour into prepared loaf pans.
- 6 topping: mix the topping ingredients together and sprinkle over the top of the batter.
- 7 bake for 60 minutes, taking care not to overbake. this was in big letters so it must be a problem to watch out for lol.
