Roast Tomato Salad

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 12 tomatoes
  • 6 sprigs thyme
  • olive oil
  • red wine vinegar
  • salt
  • fresh ground black pepper

Recipe

  • 1 wash the tomatoes, then slice them in half across the middle.
  • 2 place them cut side up in a baking dish and drizzle over some olive oil.
  • 3 season with salt and pepper and the leaves of the thyme sprigs.
  • 4 roast at 190 c or 375 f for about 40 minutes, or a little less depending on how ripe the tomatoes are.
  • 5 you want to bake them until they are puffed and tender.
  • 6 as soon as they come out of the oven, shake over a little vinegar and serve with warm, crusty bread.
