Joanne's Blueberry French Toast Casserole

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 12 slices bread, cup up
  • 16 ounces cream cheese
  • 1 cup blueberries
  • 12 eggs
  • 2 cups milk
  • 1/3 cup maple syrup
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 cup blueberries
  • 1 tablespoon butter

Recipe

  • 1 place 1/2 the bread in a greased 13x9 pan. cube cream cheese and scatter over bread, put blueberries & remaining bread on top.
  • 2 in a large bowl, beat eggs add milk & syrup. pour over bread mixture cover and chill overnight.
  • 3 remove from fridge 30 min before baking. preheat oven at 350 degrees.
  • 4 bake casserole for 30 min, covered & 30 min uncovered. until golden brown & set in center.
  • 5 during last 30 min of baking bring water, sugar & cornstarch to a boil in a med saucepan.
  • 6 boil for 3 min stirring constantly add blueberries and reduce heat to simmer. simmer for 8-10 min.or until berries burst. add butter & stir. serve over casserole & enjoy.
