Joanne's Blueberry French Toast Casserole

Ingredients

- 12 slices bread, cup up
- 16 ounces cream cheese
- 1 cup blueberries
- 12 eggs
- 2 cups milk
- 1/3 cup maple syrup
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 cup blueberries
- 1 tablespoon butter
Recipe
- 1 place 1/2 the bread in a greased 13x9 pan. cube cream cheese and scatter over bread, put blueberries & remaining bread on top.
- 2 in a large bowl, beat eggs add milk & syrup. pour over bread mixture cover and chill overnight.
- 3 remove from fridge 30 min before baking. preheat oven at 350 degrees.
- 4 bake casserole for 30 min, covered & 30 min uncovered. until golden brown & set in center.
- 5 during last 30 min of baking bring water, sugar & cornstarch to a boil in a med saucepan.
- 6 boil for 3 min stirring constantly add blueberries and reduce heat to simmer. simmer for 8-10 min.or until berries burst. add butter & stir. serve over casserole & enjoy.
