Good Morning Breakfast Casserole

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 lb bacon, cooked & drained, broken into bite sized pieces
  • 1 onion (optional)
  • 1 green pepper (optional)
  • 12 slices soft bread
  • 8 eggs
  • 3 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • salt & pepper

Recipe

  • 1 cook & drain bacon. set aside to cool.
  • 2 if using the onion and pepper: drizzle some oil or put a dab of butter in a skillet & saute the onion & pepper until softened. set aside to cool.
  • 3 tear bread into small pieces & place in a greased 9x13 pan.
  • 4 in a medium bowl, beat the eggs. then add the milk & the desired amount of salt & pepper. mix until combined.
  • 5 pour the egg mix over the bread.
  • 6 break apart bacon with hands into bite sized pieces or smaller. sprinkle cheese & crumbled bacon evenly across the top.
  • 7 refrigerate overnight or a minimum of 4 hours.
  • 8 bake at 350 for 45 minutes to 1 hour (depending on your oven). it's done when the center is puffed up.
