Garlic Toast With Olive Paste & Tomatoes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 slices country bread, toasted
  • 2 large garlic cloves
  • 2 teaspoons capers
  • 40 pitted black olives
  • 4 vine ripened tomatoes
  • 8 -10 basil leaves
  • salt & pepper (to season)

Recipe

  • 1 cut the garlic cloves in half and rub over toast before arranging on a large platter.
  • 2 then place the remaining garlic, olives, capers, most of the oil, basil plus a pinch of salt and pepper into a food processor -blend until just combined.
  • 3 spread olive paste over the toast slices. then roughly cut your tomatoes into chunks and place them onto of the toast slices.
  • 4 drizzle a little oil onto each slice and garnish with the remaining basil.
