Banana Tea Bread

Total Time: 1 hr 50 mins Preparation Time: 40 mins Cook Time: 1 hr 10 mins

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs, well beaten
  • 2 1/2-3 ripe bananas, mashed

Recipe

  • 1 sift together flour, baking powder, soda and salt.
  • 2 beat shortening until creamy.
  • 3 add sugar gradually and continue beating until light and fluffy.
  • 4 add eggs and beat well.
  • 5 add flour mixture alternately with bananas, a small amount at a time, beating after each addition until smooth.
  • 6 turn into a well-greased bread pan (8 1/2x4 1/2x3 inches).
  • 7 bake at 300 degrees, about 1 hour 10 minutes, or until bread is done.
  • 8 note: use fully ripe bananas, yellow peel flecked with brown.
