Rhubarb Cake

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 5 cups rhubarb, cut in 1/2 inch pieces
  • 1 3/4 cups sugar
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons grated orange rind
  • 3/4 teaspoon orange rind, ungrated
  • 4 cups small bread cubes
  • 1 orange, cubed
  • 1/2 cup flaked coconut
  • 1/2 cup melted oleo

Recipe

  • 1 mix rhubarb, sugar, flour, salt, grated orange rind in a bowl.
  • 2 add 2 cups of bread cubes and 1/4 cup melted oleo to above mixture.
  • 3 put in 8" x 8" x 2" baking pan.
  • 4 combine remaining bread cubes, butter 3/4 tsp orange rind, orange cubes, and coconut.
  • 5 put on top of cake and bake at 375 degrees for 40 minutes.
  • 6 serve warm.
