Rhubarb Cake

Ingredients
- 5 cups rhubarb, cut in 1/2 inch pieces
- 1 3/4 cups sugar
- 1 tablespoon flour
- 1/4 teaspoon salt
- 1 1/2 teaspoons grated orange rind
- 3/4 teaspoon orange rind, ungrated
- 4 cups small bread cubes
- 1 orange, cubed
- 1/2 cup flaked coconut
- 1/2 cup melted oleo
Recipe
- 1 mix rhubarb, sugar, flour, salt, grated orange rind in a bowl.
- 2 add 2 cups of bread cubes and 1/4 cup melted oleo to above mixture.
- 3 put in 8" x 8" x 2" baking pan.
- 4 combine remaining bread cubes, butter 3/4 tsp orange rind, orange cubes, and coconut.
- 5 put on top of cake and bake at 375 degrees for 40 minutes.
- 6 serve warm.
