Pannetone French Toast With Coconut Milk

Ingredients

  • Servings: 4
  • 1/2 vanilla bean, scraped
  • 2/3 cup coconut milk
  • 2 eggs, lightly beaten
  • 2 tablespoons sugar
  • 1/4 teaspoon ground cardamom (optional)
  • 4 tablespoons butter
  • 8 slices panettone or 8 slices other sweet bread
  • confectioners' sugar, for dusting
  • blueberries
  • whipped cream

Recipe

  • 1 put the coconut milk, eggs, sugar, vanilla seeds, and cardamom in a bowl and beat well. pour into a shallow dish.
  • 2 over medium heat, heat half the butter into a large skillet.
  • 3 dip each slice of bread into the egg mixture and cook until golden brown on both sides.
  • 4 serve dusted with confectioner's sugar and topped with blueberries and cream.
