Pannetone French Toast With Coconut Milk

Ingredients

- 1/2 vanilla bean, scraped
- 2/3 cup coconut milk
- 2 eggs, lightly beaten
- 2 tablespoons sugar
- 1/4 teaspoon ground cardamom (optional)
- 4 tablespoons butter
- 8 slices panettone or 8 slices other sweet bread
- confectioners' sugar, for dusting
- blueberries
- whipped cream
Recipe
- 1 put the coconut milk, eggs, sugar, vanilla seeds, and cardamom in a bowl and beat well. pour into a shallow dish.
- 2 over medium heat, heat half the butter into a large skillet.
- 3 dip each slice of bread into the egg mixture and cook until golden brown on both sides.
- 4 serve dusted with confectioner's sugar and topped with blueberries and cream.
