Mushroom Pie

Ingredients

- 1 unbaked pie shell
- 2 cups sliced fresh mushrooms, sliced thin and sauteed in
- 2 teaspoons margarine
- 1 cup chopped chives or 1 cup green onion (optional)
- 2 eggs, beaten
- 2 tablespoons flour
- 1 teaspoon onion powder
- 1/4 teaspoon salt
- pepper
- 1 1/4 cups ricotta cheese
- 1 cup water
- 1 teaspoon olive oil
- 1 tablespoon melted butter
- 1/2 cup breadcrumbs or 1/2 cup cracker crumb
Recipe
- 1 preheat oven to 350.
- 2 sauté mushrooms and green onions until soft and slightly browned.
- 3 place in unbaked pie shell.
- 4 combine melted butter and crumbs and set aside.
- 5 mix all the rest of the ingredients and pour into pie shell.
- 6 top with crumb mixture.
- 7 bake for 30 minutes.
