Eggnog Quick Bread

Ingredients

- 2 eggs
- 1 cup sugar
- 1/2 cup butter, melted
- 1 cup eggnog
- 2 teaspoons rum extract
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
Recipe
- 1 preheat oven to 350 f (175 c).
- 2 grease bottom of 9x5 loaf pan.
- 3 beat eggs in large bowl.
- 4 stir in sugar, butter, eggnog, rum extract, vanilla extract.
- 5 combine flour, baking powder, salt and nutmeg.
- 6 stir dry mix into egg mixture, just enough to moisten dry ingredients.
- 7 pour batter into pan.
- 8 bake for 40 to 60 minutes, or until tooth pick comes out clean when poked in the middle.
- 9 let cool for 10 min then turn out onto wire rack to cool completely.
- 10 wrap and store in refridgerator.
