Poppy Seed Peach Muffins

Ingredients
- 1/2 cup butter, plus
- 2 tablespoons butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 2 tablespoons poppy seeds
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 (6 ounce) jar peach baby food
Recipe
- 1 in a mixing bowl, cream butter and sugar.
- 2 add eggs and vanilla; mix well.
- 3 combine the flour, poppy seeds, baking soda and salt.
- 4 add to the creamed mixture alternately with baby food.
- 5 fill paper-lined muffin cups two-thirds full.
- 6 bake at 350 degrees for 20-25 minutes or until a toothpick inserted in center of muffin comes out clean.
