Poppy Seed Peach Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup butter, plus
  • 2 tablespoons butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 (6 ounce) jar peach baby food

Recipe

  • 1 in a mixing bowl, cream butter and sugar.
  • 2 add eggs and vanilla; mix well.
  • 3 combine the flour, poppy seeds, baking soda and salt.
  • 4 add to the creamed mixture alternately with baby food.
  • 5 fill paper-lined muffin cups two-thirds full.
  • 6 bake at 350 degrees for 20-25 minutes or until a toothpick inserted in center of muffin comes out clean.
