'just Like Mom's Ham-stuffed Peppers

Ingredients

- 6 green bell peppers, medium
- 2 eggs, lightly beaten
- 1 1/2 cups corn (whole kernel, fresh or canned)
- 1 1/2 cups ham (cooked, diced)
- 1 cup tomato, chopped
- 1/2 cup soft breadcrumbs
- 1/4 cup celery, finely chopped
- 2 tablespoons butter, melted
- 1 tablespoon onion, finely chopped
- 1 teaspoon salt
Recipe
- 1 preheat oven to 350 degrees. slice tops from peppers, core and remove seeds. boil in salted water 3-5 minutes. drain well. combine all remaining ingredients in a large bowl. spoon mixture evenly into pepper shells. place peppers upright in a greased baking dish. pour small amount of water to cover bottom of dish, cover dish with foil, then bake 50-60 minutes (may be frozen and reheated.
