Heavenly Banana Bread

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 2 -3 bananas, black ripe
  • 1/3 cup buttermilk
  • 1 teaspoon baking soda
  • 3/4 cup dark brown sugar
  • 1/2 cup unsalted butter
  • 1 egg
  • 1 1/3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla or 1 teaspoon dark rum (optional)

Recipe

  • 1 mash or purée the bananas and buttermilk until smooth.
  • 2 add the baking soda and mix.
  • 3 this activates the baking soda and neutralizes the soda taste.
  • 4 cream the brown sugar and butter together until smooth.
  • 5 beat in the egg.
  • 6 add the banana purée and combine.
  • 7 the mixture often appears curdled at this stage.
