Maidanosalata (parsley Dip/spread)

Ingredients

  • 8 ounces stale whole wheat bread
  • 1 cup fresh parsley leaves, chopped
  • 1 small onion, chopped
  • 1 egg yolk
  • 1/2 cup olive oil
  • 1/2 lemon, juice of (or to taste)
  • 1 tablespoon red wine vinegar
  • salt and pepper

Recipe

  • 1 dampen the stale bread with water, squeeze out the excess water and crumble.
  • 2 put the parsley and onion in the food processor and blend until smooth.
  • 3 add the bread and the egg yolk and continue to blend.
  • 4 slowly add in olive oil, lemon juice and vinegar, alternating between each, blending until the mixture is creamy and completely emulsified. taste and add more lemon juice if you think necessary.
  • 5 season to taste with salt and pepper.
  • 6 serve at room temperature or cool.

  • Servings: 4
  • 16 ounces store bought pizza dough, preferably whole wheat
  • 2 cups pastrami, sliced into strips (i like the store bought light versions)
  • 1 1/2 cups sauerkraut, store bought
  • 1/2 cup thousand island dressing, a store bought light version
  • 1/2 cup bread and butter pickles, sliced thinly (i like the zesty flavored ones)
  • 8 ounces lowfat swiss cheese (4 slices)
  • flour

Recipe

  • 1 separate pizza dough into four sections. roll out each one into a 12 inch circle. use flour to keep from sticking.
  • 2 spread 1/4th of the thousand island dressing on each dough circle.
  • 3 add 1/4th of the pastrami, sour kraut, and pickles to the center of each circle. place 1 slice of cheese on top of each serving.
  • 4 fold each circle in half (into a semi-circle) and seal edges with a fork and a bit of water. slice two holes in the top of each calzone.
  • 5 bake at 350 degrees for about 15-20 minutes until golden brown.

  • 1/2 cup shortening
  • 1 1/2 cups sugar

  • 1 cup mashed banana (3 - 4)

Recipe

  • 1 cream shortening and add sugar gradually, mix in eggs and banana.

  • 8 slices rye bread or 8 slices pumpernickel bread
  • 1/2 cup thousand island dressing
  • 12 ounces sliced corned beef
  • 2 cups sauerkraut

  • 1 spread the dressing on one side of each bread slice.
  • 2 divide the corned beef among four of the dressed bread slices. evenly distribute the sauerkraut over the meat, and top with two slices of cheese per sandwich.

  • 1 (16 ounce) can sauerkraut, drained and rinsed with cold water

  • 6 slices rye bread, crumbled into very small pieces

Recipe

  • 1 set oven to 350 degrees f.
  • 2 butter a 9 x 13-inch casserole dish.

  • 1 large eggplant, cut into 1/2 inch rounds
  • 1/2 cup flour
  • 1 1/4 cups seasoned bread crumbs
  • 1 egg, slightly beaten
  • 1 garlic clove, sliced
  • 3 large tomatoes, sliced
  • 1/2 cup olive oil
  • 3/4 cup grated parmesan cheese
  • 1/2 lb thinly sliced mozzarella cheese

  • 30 g yeast
  • 1 1/2 tablespoons brown sugar

  • 375 ml warm water
  • 440 g flour (all-purpose)
  • 150 g bread flour (i used italian flour because i didnムt had bread flour)
  • 500 ml warm water
  • 1 1/2 tablespoons baking soda
  • 30 g melted butter
  • 2 tablespoons kosher salt

Recipe

  • 1 in a large bowl dissolve the yeast, brown sugar and salt in the 375 ml warm water.
  • 2 add the flour and knead dough on a floured surface until smooth and elastic (at least 5 min).
  • 3 grease and leave to rise in a bowl, covered for about 1 hour.
  • 4 after the hour passed, mix half a liter of warm water with the baking soda in a pan.
  • 5 cut dough into 12 pieces (or 24 if you want them a smaller size).

  • 1 carrot, chopped
  • 1 small onion, chopped
  • 1/2 lb cooked corned beef
  • 1 lb lean ground chuck
  • 1 cup rye breadcrumbs
  • 1/2 cup well-drained sauerkraut
  • 2 ounces swiss cheese, cut into small cubes
  • 1/2 cup prepared thousand island dressing
  • 2 teaspoons dry mustard

  • 1 set up grill for direct cooking over medium heat oil grate when ready to start cooking. spread each frank on all sides with 1 teaspoon mustard. wrap three slices of the pastrami around each frank.
  • 2 grill pastrami-wrapped franks on hot oiled grill. cook for 12 to 16 minutes or until heated through turning frequently. serve franks hot on toasted french rolls with sliced cheese and sauerkraut. top with thousand island salad dressing.

  • 1 soften yeast in 2 cups of warm water. add sugar, salt, and flour. let rest in warm place until light and bubbly.
  • 2 combine 1/2 cup hot water, brown sugar, shortening, and let cool to luke warm.
  • 3 add pecans to brown sugar mixture. then add brown sugar mixture into sugar mixture.

  • 6 place in greased bowl, turning to make sure entire bread surface is greased. cover and keep warm in draft free place until bread has doubled in size.
  • 7 cut dough in half. knead again. place dough into 2 greased loaf pans. let rise until dough has doubled.
  • 8 bake at 375 degrees for 50 minute for a crispy top, brush with butter after 40 minutes.

  • 1 1/2 cups warm water
  • 1 1/8 teaspoons active dry yeast (1/2 pkg.)
  • 2 tablespoons brown sugar
  • 1 1/8 teaspoons salt
  • 1 cup bread flour
  • 3 cups flour
  • 2 cups warm water
  • 2 tablespoons baking soda
  • coarse salt
  • 2 -4 tablespoons butter (melted)

Recipe

  • 1 sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve.
  • 2 add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic.
  • 3 let rise at least 1/2 hour.
  • 4 while dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda.

Reuben-like Meatloaf

Ingredients

  • Servings: 8
  • 1 egg
  • 1 tablespoon ketchup
  • 2 cups soft breadcrumbs
  • 1 teaspoon salt
  • 2 lbs lean ground beef
  • 4 ounces deli pastrami, chopped
  • 1 (8 ounce) can sauerkraut, rinsed and drained
  • 1 cup shredded swiss cheese
  • 1/4 cup sour cream
  • 1 tablespoon prepared mustard

Recipe

  • 1 in a large bowl, combine the egg,ketchup, bread crumbs, and salt.
  • 2 crumble the beef over the mixture and mix well;set aside.
  • 3 in a bowl,combine pastrami, sauerkraut,cheese, sour cream and mustard.
  • 4 press a third of the mixture into a greased 9x5x3 inch loaf pan.

Reuben Sandwich Casserole

  • 1 in a mixing bowl, combine drained sauerkraut, onion, parsley, and caraway seeds.

  • 7 bake, uncovered, at 375° for about 35 minutes or until heated through and bread cubes are browned.

Mashed Potato Casserole (perunasoselaatikko)

  • 1 peel potatoes.
  • 2 boil them in salted water until soft. mash them.
  • 3 add milk and butter.
  • 4 beat soft. add eggs one at the time, beating.
  • 5 add sugar and nutmeg.
  • 6 pour into buttered casserole pot. (sprinkle bread crumbs and little butter cubes on top.) bake in 200 c oven for 30 - 40 minutes.

Feta, Tomato And Basil Grilled Cheese

  • 1 bush one side of each bread slice with olive oil. place on work surface, oiled side down. top 4 bread slices with tomatoes, basil, provolone and feta.

Eggplant (aubergine) Gyro

  • 1 preheat broiler to high.
  • 2 combine all ingredients for the sauce in a small bowl; set aside.
  • 3 toss tomatoes, cucumbers, scallions, olives, vinegar, parsley, oregano, oil, salt, and pepper together in a large bowl. chill until ready to use.
  • 4 saute eggplant in oil over medium-high heat 3 minutes. add to vegetable mixture.
  • 5 brush pitas with oil, season with salt, and broil until lightly toasted on both sides.
  • 6 assemble by placing each pita on top of a sheet of foil or parchment paper.
  • 7 drizzle 1/4 cup of sauce down the center of the pita and place about 1 cup of vegetables on top of the sauce.
  • 8 wrap foil or paper around pita and serve.

  • 6 ounces pastrami or 6 ounces corned beef, sliced
  • 4 ounces swiss cheese, sliced
  • 1/2 cup dill pickle, thinly sliced

Recipe

  • 1 heat oven to 375 degrees.
  • 2 on a lightly floured board, roll dough out to a 12 inch square.
  • 3 cut dough into 9 (4 inch) squares.
  • 4 cut meat and cheese in half diagonally to make triangles.
  • 5 layer slices of meat, cheese and pickles on half of each dough square.
  • 6 fold remaining dough over filling ingredients to form a turnover.
  • 7 pinch dough edges tightly to seal, crimp edges with a fork.
  • 8 slash top of turnover with a sharp knife to vent steam.

  • 1 cup shredded sharp cheddar cheese
  • 1 cup panko breadcrumbs, bread crumbs

  • 1 tablespoon butter, for greasing pan

  • 1 preheat oven to 425 degrees.
  • 2 spread mashed potatoes evenly in a buttered 13 x 9 baking pan. in a medium bowl mix together cheddar, bread crumbs, parmesan, paprika and pepper. top mashed potatoes with cheese and bread crumb mixture and bake in the preheated oven for 10 minutes. after 10 minutes if the casserole is not brown on the top, turn on the broiler for a minute or two and remove from oven when browned. allow to cool for 5 minutes and serve.

Oatmeal Beer Bread

  • 2 cups flour
  • 1 tablespoon salt
  • 1/2 cup sugar
  • 3 tablespoons baking powder

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease a 5x9 loaf pan.
  • 3 combine oats, flour, salt, sugar, baking powder, water and beer and put into the prepared loaf pan.
  • 4 bake for 30 minutes. generously brush top of loaf with melted butter, reserving some for a second brushing.
  • 5 return to oven and bake for 30-40 minutes more until a toothpick inserted in the middle comes out clean. remove from the oven and brush with reserved butter.

Reuben Noodle Casserole

  • 8 ounces corned beef (see directions)
  • 1 (16 ounce) bag sauerkraut, drained
  • 2 teaspoons caraway seeds

  • 1/2 cup thousand island dressing
  • 1/2 cup milk
  • 1 tablespoon mustard
  • 2 slices pumpernickel bread
  • 1 tablespoon butter

  • 1 preheat the oven to 350f, and spray a 13x9-in. baking dish with non-stick cooking spray. cook the noodles according to the directions on the package and drain.
  • 2 if using deli corned beef, cut it into bite-sized pieces. if using leftover brisket, shred. mix the corned beef, noodles, sauerkraut, caraway seeds, and swiss cheese in a bowl and pour into the baking dish.
  • 3 mix the thousand island dressing, milk, and mustard in a bowl, then spread evenly over the noodle mixture.

  • 14 ounces corned beef, sliced, and torn into small pieces (can use more)

  • 2 tablespoons thousand island dressing (or to taste)
  • 2 large fresh tomatoes, sliced

  • 1 lb swiss cheese, grated
  • 1/2 cup onion, thinly sliced
  • 1 (15 ounce) can sauerkraut, drained
  • 1 lb corned beef, sliced
  • 3/4 cup thousand island dressing
  • 1/4 cup mayonnaise
  • 1 tablespoon butter

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 spray 2 quart casserole dish with non-stick cooking spray.
  • 3 toast the rye bread and lightly butter 1 side only. arrange 3 slices (butter side up) in bottom of casserole dish (cut to fit if you so desire).
  • 4 sprinkle 1/3 cup of grated swiss cheese over buttered toast.
  • 5 arrange drained sauerkraut over the cheese and bread.
  • 6 mix salad dressing with the mayonnaise in separate bowl and spoon 1/2 of the mixture over the sauerkraut.
  • 7 chop the corned beef into bite size piece and spread evenly in the dish.
  • 8 top with very thinly sliced onion and then 1/3 cup grated swiss cheese and remaining corned beef.
  • 9 finish the dish with remaining swiss cheese and remaining dressing mixture.
  • 10 bake 15-20 minutes or until bubbly. place remaining 3 slices of toasted rye bread (buttered side down) over top and continue baking for 5-10 minutes.
  • 11 let sit for 5 minutes. cut and serve hot.

Leach Family Turkey Stuffing

  • 2 cups celery, diced
  • 1 cup onion, finely chopped
  • 1 lb bulk sausage (mild flavor)
  • 2 loaves bread, torn into pieces and dried overnight (~1 lb each)
  • 2 -4 tablespoons poultry seasoning (bells is best)
  • 1 1/2 cups turkey broth or 1 1/2 cups bouillon
  • 2 eggs

Recipe

  • 1 the night before, tear up bread and leave on counter to dry.
  • 2 brown sausage in pan. part way through add celery and onions and cook till translucent and sausage is done.
  • 3 while sausage is browning, put bread in large bowl, sprinkle poultry seasoning on top (start with 2 tablespoons). add meat mixture and mix gently. add half of broth and mix with hands, taste and see if you need more seasoning. add eggs and as much remaining broth (or more) as necessary for texture. mix till well blended. i still stuff in bird,(mostly in neck skin - loosely in cavity) but finish it in oven after bird is out. temp should be 165 when checked.

Mold And Mildew Dip Aka Spinach Artichoke Dip

  • 3 add as much green food coloring as desired. bake at 350°f for 30 minutes and serve with sturdy crackers or bread rounds. tortilla chips also go great with this dish.

Reuben Sandwich Our Way

  • 1/3 cup mayonnaise (best foods or hellmann's or vegenaise)
  • 1/4 cup catsup
  • 1/2 teaspoon dill relish
  • 1/2 teaspoon sweet pickle relish
  • 1/4-1/2 teaspoon dried onion flakes, to taste
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon lemon juice (we use both, to taste, the balsamic really adds nice flavor) or 1/4 teaspoon balsamic vinegar (we use both, to taste, the balsamic really adds nice flavor)
  • black pepper, to taste
  • 2 slices dark rye bread (caraway or not, it's up to you, but we prefer it without)
  • 3 teaspoons butter
  • 3 -4 ounces thinly sliced deli pastrami
  • 1/3 cup sauerkraut, drained well (we prefer bubbie's naturally fermented kraut)
  • 1 -2 ounce sliced provolone cheese or 1 -2 ounce swiss cheese or 1 -2 ounce monterey jack cheese

Recipe

  • 1 in a small bowl, make the dressing: combine the mayonnaise, catsup, relishes, onion, garlic, lemon juice, and black pepper to taste; set aside.
  • 2 spread butter on one side of each slice of bread.
  • 3 heat a large non-stick pan over medium heat and place one slice of bread, butter-side down, in the pan.
  • 4 assemble the sandwich: on top of the bread, place the sliced pastrami; top meat with a couple of tablespoons of the dressing; then spread the sauerkraut over, add some more dressing, top with the cheese, then place the other slice of bread- buttered side up- on top (this arrangement helps keep the dressing from soaking the bread too much).
  • 5 cover the grilling sandwich with a lid (a reverware saucepan lid works well for this) and let grill for 2 to 3 minutes, checking to make sure that the bread does not burn- the idea is to heat the air underneath the lid and melt the cheese easier as you're also browning the bread.
  • 6 carefully turn the sandwich, re-cover, and grill other side. (i say "carefully" because, depending on how much of the fillings you put in, this step can get a little messy -- ).
  • 7 cut the completed grilled sandwich in two and serve with the extra dressing for dipping, along with a dill pickle and potato chips or potato salad.

Reubens With Stoneground Mustard

  • 1 butter one slice of rye bread and place on non-stick skillet or griddle.
  • 2 layer the corned beef, the sauerkraut and the swiss cheese on top of the corned beef.
  • 3 spread the stoneground mustard on the remaining slice of rye bread.
  • 4 place on top of the sandwich- mustard side down.
  • 5 butter the top of the sandwich with the remaining tablespoon of butter and grill until golden on each side.

Orange & Cherry Bread-and-butter Pudding

  • 2 tablespoons butter, softened
  • 1/2 cup dried cherries
  • 1/2 cup rum
  • 11 slices challah or 11 slices brioche bread, about 1 inch thick
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1 cup sugar, divided use
  • 6 large eggs, beaten
  • 3 large egg yolks, beaten
  • 3 teaspoons vanilla extract
  • 2 tablespoons orange zest
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Recipe

  • 1 preheat the oven to 350°f generously brush a large, shallow baking dish with the softened butter.
  • 2 place the cherries in a bowl and add enough rum just to moisten. cut the bread into 1-inch cubes. arrange the bread cubes in a single layer on a baking sheet, drizzle with the melted butter, and toast in the oven, stirring once or twice, until golden brown, 8-10 minutes.
  • 3 to make the custard, bring the milk and half of the sugar to a boil in a medium saucepan. whisk together the eggs, egg yolks, vanilla, and remaining half of the sugar in a medium bowl. gradually add about one-third of the hot milk mixture to the eggs, stirring constantly with a wooden spoon. add the egg mixture to the remaining hot milk. reduce the heat to low and simmer, stirring constantly, until the custard coats the back of the spoon. remove from the heat and strain the custard through a fine-mesh sieve. chill the custard in an ice bath until cooled, at least 1 hour.
  • 4 stir the orange zest, cinnamon, and salt into the cooled custard. drain the cherries and add them to the custard along with the toasted bread cubes. let this mixture set until the bread cubes have soaked up the custard and softened.
  • 5 ladle the custard mixture into the prepared baking dish. bake in a water bath for 65-70 minutes. remove the dish from the water bath, wipe down the sides and bottoms of the baking dish, and place on a cooling rack for at least 1 hour. serve warm or refrigerate until fully cooled before serving.

Peanut Butter, Nanner, Hunny, And Tater Chip Samwich!

  • 2 slices sto'-bought bread (my mother used "roman meal" which may or may not have been whole-grain, but it looked healthier than)
  • 1 tablespoon chunky peanut butter
  • 1 tablespoon mayonnaise (pronounced my-naze down here)
  • 1/2 ripe banana, sliced thin
  • potato chips, handful crushed (mom used lay's back then, but as an educated gourmet i now prefer kettle chips or zapp's)
  • 1 tablespoon honey

  • 1 don't toast the bread or fool with it in any way. spread the peanut butter on each slice first, then slap on the mayonnaise. arrange the nanner slices, drizzle the hunny, and sprinkle on the tater chips. put the slices together, wrap it in a napkin (hunny is bad to drip) and enjoy!

  • 1/2 cup swiss cheese, shredded

Recipe

  • 1 combine ground beef, bread crumbs, dressing, egg and pepper.
  • 2 pat into approximately a 10x12 rectangle on a piece of waxed paper.
  • 3 top with sauerkraut and swiss cheese, and roll up like a jelly roll.
  • 4 seal ends and place seam side down into a meatloaf pan.
  • 5 bake at 350 for 45 minutes or until done.
  • 6 i usually sprinkle a little more cheese on top and put it back into the oven to melt it.

Oatmeal Bread

Ingredients

  • 1 cup quick oats
  • 3 tablespoons shortening
  • 1 tablespoon salt
  • 3 tablespoons molasses
  • 1/2 cup sugar
  • 2 cups boiling water
  • 1 package yeast
  • 1 tablespoon sugar
  • 1/2 cup water, lukewarm
  • 6 cups flour

Recipe

  • 1 pour the boiling water over the quick oats, shortening, salt, molasses and 1/2 cup sugar.
  • 2 let stand until lukewarm.
  • 3 dissolve yeast and sugar in 1/2 cup lukewarm water and add to oat mixture. add flour and knead until firm.
  • 4 let stand until double in size. form into 2 loaves and let rise again until double in size. bake at 350 degrees for 1 hour.

  • 1/2 cup cornmeal
  • 4 1/2 cups wheat flour

  • 1 heat water, margarine, and honey to 120f (48c).
  • 2 add flour, oats, yeast, salt, and eggs.
  • 3 beat in mixer for 3 minutes.

  • 1 preheat the oven to 350 degrees f.
